This unique coffee blend combines beans from the Al-Hayma and Anis regions, carefully decaffeinated using the CO2 method. This process maintains the coffee’s original moisture content, resulting in a product ready for roasting. The final cup offers vibrant tasting notes of grape, raspberry, and lemon, showcasing the exceptional care and expertise involved in its production.
Producers in these regions meticulously handpick only the ripest cherries, often making several passes on each tree to ensure peak ripeness. After harvesting, cherries are cleaned and sorted at Sheba’s processing hub near Sana’a, then dried using a combination of raised beds and greenhouses. This meticulous drying process, which takes two to three weeks, ensures even moisture levels between 11-12%, preserving the beans’ quality.
After drying, the beans are rested, hulled, and carefully sorted before decaffeination. The CO2 method used for decaffeination is both efficient and sustainable, allowing for the reuse of CO2 and the repurposing of extracted caffeine for products such as pharmaceuticals.
